CHEMEX BREW GUIDE

CHEMEX

Invented in 1941 by Peter Schlumbohm, where "logic meets madness." This is one of our favorite ways to brew. It is very similar to a pour over but requires more accuracy and time. 

You will need: Chemex carafe, Chemex filters, gooseneck kettle, burr grinder, scale (optional), Cold Filtered water, Fresh BOLD3 Coffee.

Brew ratio: 1 tablespoon to every 5 oz cup. If using scale, 50 grams of coffee to 700 grams of water

Grind level: medium coarse (sea salt consistency)

Brew time: 3 - 4 min.

1.) Heat cold, filtered water in kettle to 200 degrees. 

2.) Grind BOLD3 Coffee to medium coarse ground (sea salt consistency).

3.)  Open the Chemex filter into a cone shape so that one side has one layer and the other 3 layers. Place the 3 layer side into brewer to cover the pouring spout.

4.) Preheat and rinse filter by pouring hot water in and once it runs through, pour out on non-spout side.

5.) Measure and put in filter 1 rounded Tablespoon of ground coffee for every 5 oz. cup. Use more if you prefer it stronger. 

6.) Once water reaches a boil, allow it to stop boiling (ideal temp. 200 degrees). Pour a small amount of water over grounds to wet them and wait 30 sec. for them to "bloom" and release the desirable elements.  

7.) After grounds bloom, slowly pour the water over the grounds while keeping water level below the top of the Chemex (1/4 inch or more).

8.) Slowly pour remaining water over grounds using circular or back-and-forth motion as you pour for even soaking.

9.) Once coffee amount is reached, lift the filter out and discard. 

10.) Pour your heavenly handcrafted coffee into your favorite mug. Ahhhhh, heavenly. Praise Jesus! 

EXTRA TIPS: If you were not happy with the end result - try changing the grind level. If the coffee is bitter, it may be over extracted and need a slightly coarser grind. If coffee is weak or sour, try grinding more finely.
